Absinthe is a liquor which is generally between 45 and 75% ABV (alcohol by volume), about twice as strong as other types of alcoholic beverages such as whisky and vodka.

Otherwise known as “The Green Fairy” or “La Fee Verte”, Absinthe was the drink associated with Bohemian Paris. It was given to French soldiers in the 1840s to treat malaria and they brought the drink home with them. Absinthe bars opened in Paris and special Absinthe hours or "L'heure verte" took place daily. By the middle of the 19th century, distiller Pernod, who were the distillers of Absinthe, were making over 30,000 liters of Absinthe everyday for the French people to buy!

Absinthe Drink History

History says that Dr Pierre Ordinaire created Absinthe in the Swiss town of Couvet in the 18th century as a tonic for his patients. The original Absinthe recipe eventually got into the hands of Henri-Louis Pernod who first distilled Absinthe in Couvet and then later in Pontarlier, France under the name of Pernod Fils.

Pernod used a base of wine and various herbs including common wormwood (artemisia absinthium), aniseed, fennel, lemon balm, hyssop, angelica, dittany, star anise, nutmeg and juniper.

Well known drinkers of the Green Fairy were Van Gogh, Pablo Picasso, Oscar Wilde, and Ernest Hemingway.

Absinthe became more popular than wine, in France, and a movement campaigned to get Absinthe banned because:-

The buying, selling and consumption of Absinthe in France was made illegal in France in 1915 and in many other countries around this same time.

Many unique studies have shown that Absinthe, including vintage Absinthe, only contains very small amounts of thujone and is perfectly safe to drink. Legalized in most all countries since the 1990s, there has been an Absinthe revival in many countries, including the USA which has recently allowed a few brands to be marketed and sold.

Care needs to be used when consuming Absinthe because it is so strong and will intoxicate quickly. We need to take particular care when mixing Absinthe with other alcoholic drinks in cocktails.

Care should also be taken when making your own homemade Absinthe drink. If you buy an Absinthe kit from someone like Green Devil then you are simply steeping herbs in a neutral alcohol such as Everclear or vodka. Everclear has alcohol by volume of 95% and a proof of 190 so it is much stronger than commercial Absinthe. Other techniques for increasing sweetness include using grapes that have a specific type of mold on them, freezing out some of the water, or drying the grapes before fermentation.

In every country, wine is classified according to the variety of grapes included, the final percentage of alcohol content, the overall flavor and the general color. Unfortunately, the categories can vary greatly from one location to another, depending on laws and customs. For example, the dessert wines category includes wine with a high sugar content. In the US, that category also includes having an alcohol content higher than 14%, even if the content is due to alcohol fortification. In the UK, on the other hand, that category includes any sweet wine that is consumed with a meal, but does not include any that are fortified.

Wine selection and food pairings can be something of a controversial process. Some experts claim that certain combinations should always be served together, while others insist that selection and pairing should be based on the individual palate. Both sides seem to agree, however, that dessert wines should be served after the meal, whether alone or with an actual dessert. However, these are the simple instructions for wine making; in fact, there is no single accurate measure for the quantity of the fruit to be used in wine making process.

Once
this fermentation process is completed the clarification process begins. Filtering and fining are also usually done at this stage, filtering which can be done with everything from a course filter that catches only large solids to a sterile filter pad that wipes wine of all life. Fining on the other hand, occurs when substances are added to a wine to clarify them. Finally in the wine making process is the stage of aging and bottling. You can either bottle the wine
immediately, or further aging can be done in bottle, stainless steel or ceramic tanks.

You can really personalize this process and make it your own as long as you include the basics, and you will have a lot of fun and produce some fantastic wine that you can share with your family and friends.
